Black Cherry- Cracked Red Pepper Infused Urbane Shiraz Reduction with Smoked Quail and Mini Corn Cakes

Begin with smoked quail smoke quail for 15 minutes and finish in oven so smoke flavor is not to intense
Mini Corn Cakes Start with one can of cream corn and add one egg, 1tbsp baking powder, chopped green onion, chopped garlic, salt and pepper. Slowly mix in corn flour until a pancake consistency is achieved. Fry in skillet with butter until golden brown.
Sauce Begin with puréed fresh or dried black cherries. Lightly sauté garlic, one bay leaf, pinch cracked red pepper, and cherry puree. Deglaze with a whole bottle 2004 Urbane Shiraz. Reduce by 4 times or until a thick glaze sauce
