No recipe for Hoppin’ John recipe

In the Southern states of the United States, Hoppin’ John is a traditional New Year’s Day meal.  The black eyed peas are said to bring good luck in the coming year.  This recipe was concocted January 1st 2006 when I lost my regular recipe. Most of the measurements should be done to taste, since that was how the recipe was created.  This is very quick & tasty.

1 bottle of Urbane Shiraz
3 cans of black eyed peas (drained)
28 ounces of sausage (spicier is better)
1 large onion
4 jalapenos (or less if you don’t like it hot)
2 cloves garlic
4 cups of rice (cooked)
paprika to taste
cayenne pepper to taste
1 can diced tomatoes with sauce
molasses to taste (maybe 3 tablespoons)
olive oil

Slice & sauté the vegetables in olive oil. Drain the excess oil.  Place them in large pot.
Add 1/3 of a bottle of Urbane Shiraz.
Pour yourself a glass of Urbane Shiraz & set the rest aside for later.
Stir in the rest of the ingredients.
Heat until the meal is warm all of the way through & that’s it.
Serves 4
